Louis Pasteur proved through careful experiments that germs cause fermentation and disease. His method of gently heating liquids to kill microbes, pasteurisation, still keeps milk safe today. He developed vaccines for chicken cholera and anthrax, and in 1885 treated nine year old Joseph Meister, who had been bitten by a rabid dog. The boy survived. Pasteur's work laid the ground for modern medicine, and the Pasteur Institute he founded in Paris still leads the fight against disease.
